Cooking Instructions

1

Prepare the Ingredients

Cook the udon noodles according to package instructions, drain and set aside. Chop the bacon, bell peppers, onion, and snow pea leaves. Mince the garlic and chop the Thai basil.

2

Cook the Bacon

In a large skillet or wok, cook the bacon over medium heat until crispy. Remove the bacon and set aside, leaving the rendered fat in the pan.

3

Sauté Vegetables

In the same skillet, add the sliced onion and bell peppers to the bacon fat. Sauté for about 3-4 minutes until they start to soften.

4

Add Garlic and Pea Leaves

Add the minced garlic and snow pea leaves to the skillet. Cook for an additional 2-3 minutes until the pea leaves are wilted.

5

Scramble Eggs

Push the vegetables to the side of the skillet, crack the eggs into the pan, and scramble them until just set.

6

Combine Noodles and Bacon

Add the cooked udon noodles and crispy bacon back into the skillet. Toss everything together gently to combine.

7

Finish with Thai Basil and Sauce

Remove from heat and stir in the chopped Thai basil and hot Korean pepper sauce. Adjust seasoning to taste.
