Preparation

  1. 1

    Prepare the Filling

In a large skillet over medium heat, combine the coconut milk and Thai red curry paste. Stir until well combined and simmer for about 5 minutes.

  2. 2

    Add Shrimp

Add the shrimp to the skillet and cook until they turn pink and opaque, about 3-4 minutes.

  3. 3

    Add Herbs and Seasonings

Stir in the lime juice, cilantro, basil, salt, and pepper. Remove from heat and let the mixture cool.

  4. 4

    Prepare the Crust

Preheat the oven to 375°F (190°C). Roll out your pie crust and fit it into a pie dish, trimming any excess.

  5. 5

    Assemble the Pie

Pour the shrimp filling into the prepared pie crust, spreading it evenly.

  6. 6

    Bake the Pie

Bake in the preheated oven for 25-30 minutes or until the crust is golden brown. Let it cool slightly before serving.

  7. 7

    Serve

Garnish with additional cilantro and lime wedges if desired. Slice and serve warm.
