Marinate the Chicken
In a bowl, mix olive oil, lime juice, garlic powder, cumin, salt, and black pepper. Add chicken breasts and coat them well. Cover and marinate in the refrigerator for at least 30 minutes.

Grill the Chicken
Remove chicken from the marinade and discard the marinade. Place chicken on the grill and cook for about 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C).

Cook the Bacon
While the chicken is grilling, cook the applewood smoked bacon in a skillet over medium heat until crispy. Remove and drain on paper towels.

Assemble the Dish
Once the chicken is cooked, remove it from the grill and let it rest for a few minutes. Top each chicken breast with a slice of smoked gouda cheese, crispy bacon, and sliced red onions. Drizzle with chipotle crema before serving.
