    Marinate the Pork

    In a bowl, combine garlic, orange juice, lime juice, cumin, oregano, salt, and black pepper. Place the pork shoulder in a large resealable bag and pour the marinade over it. Seal and refrigerate for at least 4 hours, preferably overnight.

    Cook the Pork

    Preheat your oven to 300°F (150°C). Remove the pork from the marinade and place it in a roasting pan. Cover tightly with aluminum foil and roast for about 4 hours, or until the pork is tender and easily shreds with a fork.

    Shred the Pork

    Once cooked, remove the pork from the oven and let it rest for 30 minutes. Shred the pork using two forks.

Caramelizing Onions

    Caramelize the Onions

    In a skillet, heat olive oil over medium heat. Add sliced onions and cook, stirring occasionally, until they are golden brown and caramelized, about 20-25 minutes.

    Assemble the Sandwich

    On each bun, layer the pulled pork, caramelized onions, sliced provolone cheese, sliced jalapeños, and a generous dollop of aioli. Serve warm.
