Prepare the Chicken
In a large bowl, combine the buttermilk, salt, and black pepper. Add the chicken thighs and ensure they are fully coated. Cover and refrigerate for at least 2 hours or overnight for best results.

Pickle the Onions
In a small saucepan, combine the white vinegar, sugar, and salt. Bring to a simmer until the sugar dissolves. Pour over the sliced red onions in a bowl. Let sit for at least 30 minutes.

Fry the Chicken
Heat oil in a deep fryer or large pot to 350°F (175°C). Remove the chicken from the marinade and let excess buttermilk drip off. Dredge in Nashville hot shake seasoning. Fry the chicken in batches for about 12-15 minutes or until golden brown and cooked through. Drain on paper towels.

In a bowl, mix together crumbled gorgonzola cheese, sour cream, mayonnaise, lemon juice, and black pepper until well combined and creamy.
