Filling Preparation

    Cook the Steak

    Season the beef steak with salt and pepper. Heat 1 tablespoon of olive oil in a pan over medium-high heat, and sear the steak for about 4-5 minutes on each side until browned. Remove from the pan and let it rest for 10 minutes before slicing into bite-sized pieces.

    Caramelize Onions and Mushrooms

    In the same pan, add another tablespoon of olive oil. Add sliced onions and cook on low heat until they are soft and caramelized (about 15 minutes). Add sliced mushrooms and cook for another 5-7 minutes until they are tender. Mix in the sliced steak and remove from heat. Stir in crumbled gorgonzola cheese and chopped scallions.

    Prepare Horseradish Crema

    In a small bowl, mix the horseradish sauce with a little sour cream or mayonnaise to create a crema for serving.

    Make the Dough

    In a mixing bowl, combine flour and butter, rubbing together until it resembles breadcrumbs. Gradually add cold water until a dough forms. Wrap in plastic and chill for 30 minutes.

    Assemble the Pie

    Preheat the oven to 200°C (392°F). Roll out the pastry and line a pie dish. Fill with the steak and mushroom mixture. Cover with another layer of pastry, sealing the edges. Cut a few slits in the top for steam to escape. Brush with beaten egg for a golden finish.

    Bake the Pie

    Bake in the preheated oven for 25-30 minutes or until the pastry is golden brown. Let it cool for a few minutes before serving.
