    Make the Sriracha Aioli

    In a small bowl, combine mayonnaise, Sriracha sauce, and lemon juice. Mix well until smooth and set aside.

    Prepare the Filling

    In a large skillet over medium heat, sauté minced garlic and diced red onion until softened, about 3-4 minutes.

    Add Shrimp and Pineapple

    Add the shrimp to the skillet and cook until pink, about 3-5 minutes. Stir in the fresh pineapple and cook for another 2-3 minutes.

    Mix in Herbs

    Remove the skillet from heat and stir in chopped scallions, basil, mint, and cilantro until well combined.

Assembly and Baking

    Assemble the Pie

    Pour the shrimp and herb mixture into the prepared pie crust. Spread the filling evenly.

    Preheat the oven to 375°F (190°C) and bake the pie for 25-30 minutes or until the crust is golden brown.

    Remove from the oven, let cool slightly, then drizzle with Sriracha aioli before serving.
