Preparation

    Prepare the Shrimp

    Peel and devein the shrimp. Rinse under cold water and pat dry with paper towels.

    Chop the Vegetables

    Finely chop the garlic, slice the red onion, and chop the scallions. Set aside.

    Prepare the Pineapple

    Cut the fresh pineapple into bite-sized chunks.

    Chop the Herbs

    Finely chop the basil, mint, and cilantro.

Cooking

    Sauté the Ingredients

    In a large skillet over medium heat, add a splash of oil. Once hot, add the garlic and red onion. Sauté for about 2-3 minutes until fragrant.

    Cook the Shrimp

    Add the shrimp to the skillet and cook until they turn pink, about 3-4 minutes.

    Add Pineapple and Herbs

    Stir in the pineapple chunks and chopped herbs, cooking for an additional 2 minutes.

    Serve with Sriracha Aioli

    Remove from heat, serve warm, drizzled with sriracha aioli on top.
