Flatbread Preparation

Activate Yeast
In a small bowl, combine warm water and active dry yeast. Let sit for about 5 minutes until frothy.

Make Dough
In a large mixing bowl, combine flour, salt, and chopped rosemary. Add the yeast mixture and olive oil. Stir until a dough forms.

Kneading
Knead the dough on a floured surface for about 5-7 minutes until smooth. Place in a greased bowl, cover with a cloth, and let rise in a warm place for about 1 hour or until doubled in size.

Preheat Oven
Preheat your oven to 475°F (245°C).

Shape Flatbreads
Once risen, punch down the dough and divide it into 4 equal pieces. Roll each piece into a flat round shape about 1/4 inch thick.
Roasted Garlic

Prepare Garlic
Slice the top off the whole garlic bulb to expose the cloves. Drizzle with olive oil and wrap in aluminum foil. Roast in the oven for about 30-40 minutes until soft.

Extract Garlic
Once roasted, let cool slightly, then squeeze the soft garlic cloves out of the skins.

Bake Flatbreads
Place rolled flatbreads on a baking sheet. Spread roasted garlic over the surface and sprinkle crumbled goat cheese on top. Bake for 12-15 minutes or until golden brown.

Make Balsamic Reduction
In a small saucepan, combine balsamic vinegar and honey. Bring to a simmer and reduce until thickened, about 10-15 minutes.

Drizzle the balsamic reduction over the baked flatbreads, season with salt and pepper, and serve warm.
