Preparation

    Roast the Mushrooms

    Preheat your oven to 200°C (400°F). Clean the mushrooms and slice them in half or quarters. Toss them with 2 tablespoons of olive oil, salt, and pepper. Spread them out on a baking sheet and roast for 20-25 minutes until golden and tender.

    Caramelize the Onions

    While the mushrooms are roasting, slice the onion thinly. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the onions and a pinch of salt. Cook for about 15-20 minutes until they become soft and caramelized, stirring occasionally.

    Prepare the Garlic

    Mince the fresh garlic cloves. In the last 5 minutes of the mushrooms roasting, add the minced garlic to the baking sheet with the mushrooms to roast them slightly.

Assembly

    Combine Ingredients

    In a large bowl, combine the roasted mushrooms and garlic with the caramelized onions. Crumble the feta cheese over the top and add the fresh herbs. Drizzle with the remaining olive oil and season with salt and pepper to taste.

    Toss gently to combine and serve warm as a side dish or a topping for toasted bread.
