Prepare the Pie Crust

    Make the Dough

    In a large bowl, mix flour and salt. Cut in butter until mixture resembles coarse crumbs. Stir in ice water, a tablespoon at a time, until dough comes together. Divide into two disks, wrap in plastic, and chill for at least 30 minutes.

Cook the Filling

    Caramelize the Onions

    In a skillet, heat olive oil over medium heat. Add sliced onions and cook, stirring occasionally, until caramelized (about 15-20 minutes). Set aside.

    Combine Filling Ingredients

    In a large bowl, mix the pulled pork, diced pineapple, sliced jalapeños, caramelized onions, crumbled feta, and chopped cilantro.

Assemble the Pie

    Fill the Pie

    Preheat your oven to 375°F (190°C). Roll out one disk of dough and place it in a pie dish. Fill with the pork mixture. Roll out the second disk and cover the filling. Seal the edges and cut slits for steam.

    Bake the Pie

    Bake in preheated oven for 40-45 minutes, or until the crust is golden brown. Let cool for 10 minutes before serving.

    Serve warm and top each slice with a dollop of crème fraîche.
