Pork and Toppings

Method

Preparation and Cooking

  1. 1

    Prepare the Pork

Rub the pork shoulder with olive oil, minced garlic, cumin, salt, and black pepper. Place in a slow cooker and cook on low for 8 hours or until the pork is tender and easily shredded.

  2. 2

    Caramelize the Onions

In a skillet, heat some olive oil over medium heat. Add sliced onions and cook until they become soft and caramelized, about 20-25 minutes. Stir occasionally to prevent burning.

  3. 3

    Shred the Pork

Once the pork is cooked, remove it from the slow cooker and shred it using two forks. Return the shredded pork to the slow cooker to soak up the juices.

  4. 4

    Assemble the Dish

On a serving platter, layer the shredded pork, caramelized onions, diced pineapple, sliced jalapeños, crumbled feta, and chopped cilantro. Drizzle crème fraîche over the top before serving.
