Preparation

Brownie Preparation

1. Make the Brownies

Preheat the oven to 350°F (175°C). Grease and line a 9x13 inch baking pan with parchment paper. In a saucepan, melt 1 cup of butter over low heat. Remove from heat and stir in granulated sugar, brown sugar, and eggs until well combined. Mix in vanilla extract. Sift together flour, cocoa powder, and salt, then fold into the wet mixture until just combined. Pour into the prepared pan and bake for 25-30 minutes until a toothpick comes out with a few moist crumbs. Let cool completely.

Peanut Butter Layer Preparation

2. Prepare the Peanut Butter Layer

In a mixing bowl, beat together creamy peanut butter, powdered sugar, 0.25 cup of softened butter, and 0.5 tsp of vanilla extract until smooth. Gradually add the heavy cream and continue to beat until well combined and creamy.

Assembly

3. Layer the Brownies and Peanut Butter

Once the brownie layer has cooled, slice it into two equal layers. Place one layer in a serving dish, spread half of the peanut butter mixture on top, and then place the second brownie layer on top of the peanut butter layer. Spread the remaining peanut butter mixture on top.

Chocolate Ganache Preparation

4. Create the Ganache

In a saucepan over medium heat, heat 1 cup of heavy cream until it just begins to simmer. Remove from heat and add the semi-sweet chocolate chips. Let sit for 5 minutes, then stir until smooth and glossy.

Final Assembly

5. Finish the Terrine

Pour the chocolate ganache over the assembled brownie and peanut butter layers, spreading it evenly. Refrigerate for at least 2 hours until set. Slice into portions and serve chilled.
