Prepare the Pie Crust

Make the Dough
In a large bowl, combine all-purpose flour and salt. Cut in the cold butter until the mixture resembles coarse crumbs. Gradually add ice water, mixing until a dough forms. Shape the dough into a ball, wrap in plastic wrap, and refrigerate for at least 30 minutes.

Roll Out the Dough
Preheat the oven to 375°F (190°C). On a floured surface, roll out the dough to fit a 9-inch pie dish. Place the dough in the dish, trimming any excess.
Prepare the Filling

Cook the Bacon
In a skillet over medium heat, cook the applewood smoked bacon until crispy. Remove and drain on paper towels, then chop into pieces.

Combine Ingredients
In a mixing bowl, combine the cooked chicken, sautéed onions, chopped bacon, smoked gouda, chipotle crema, and black pepper. Mix until well combined.
Assemble and Bake

Fill the Pie
Pour the chicken and gouda mixture into the prepared pie crust. Spread it evenly.

Bake in the preheated oven for 30-35 minutes, or until the crust is golden and the filling is bubbly.

Once the pie is out of the oven, let it cool for a few minutes. Sprinkle with chopped scallions before serving.
