Prepare the Ingredients

Start by gathering all the ingredients. Make sure the shrimp are peeled and deveined, and the herbs are chopped.

Cook the Shrimp

In a large skillet, heat the vegetable oil over medium heat. Add the shrimp and cook for about 2-3 minutes on each side until they turn pink and opaque. Remove from skillet and set aside.

Make the Curry Sauce

In the same skillet, add the Thai red curry paste and stir-fry for about 1 minute until fragrant. Pour in the coconut milk and lime juice, and bring to a simmer.

Combine Everything

Add the cooked shrimp back to the skillet and stir to combine. Let it simmer for an additional 5 minutes. Season with salt to taste.

Serve

Once the shrimp are well coated in the curry sauce, remove from heat. Garnish with toasted coconut, fresh cilantro, and basil before serving.
