Brownie and Peanut Butter Layers
Instructions
1. Prepare the Brownies
Preheat your oven to 350°F (175°C). Grease and line a 9x5 inch loaf pan with parchment paper.
2. Mix the Brownie Batter
In a saucepan, melt the butter over low heat. Remove from heat and stir in the granulated sugar, brown sugar, eggs, and vanilla extract until combined. Add in flour, cocoa powder, and salt, and mix until just combined.
3. Bake the Brownies
Pour half of the brownie batter into the prepared pan. Bake for 15-20 minutes, until a toothpick inserted in the center comes out with a few moist crumbs.
4. Prepare the Peanut Butter Layer
In a bowl, mix the peanut butter and powdered sugar until smooth and well combined.
5. Layer the Peanut Butter
Spread the peanut butter mixture over the baked brownie layer. Pour the remaining brownie batter on top and spread evenly.
6. Finish Baking
Return to the oven and bake for another 20-25 minutes, or until a toothpick comes out clean. Let cool completely in the pan.
7. Make the Chocolate Ganache
In a saucepan, heat the heavy cream until just simmering. Remove from heat and add the chocolate chips. Let sit for a minute, then stir until smooth.
8. Assemble the Terrine
Once the brownie terrine has cooled, remove it from the pan. Pour the ganache over the top and let it set at room temperature or refrigerate until firm.
9. Serve
Slice the terrine with a sharp knife and serve chilled or at room temperature.
