Flatbread Preparation

Prepare the Dough

In a small bowl, combine warm water and active dry yeast. Let it sit for about 5 minutes until frothy. In a large mixing bowl, combine all-purpose flour, chopped rosemary, and salt. Make a well in the center and add the yeast mixture and olive oil.

Knead and Rise

Mix until a dough forms, then knead on a floured surface for about 5-7 minutes until smooth. Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Roast the Garlic

While the dough is rising, preheat the oven to 400°F (200°C). Cut the top off the head of garlic, drizzle with olive oil, wrap in foil, and roast in the oven for about 30-35 minutes until soft.

Shape the Flatbread

Once the dough has risen, punch it down and divide it into two equal portions. Roll each portion into a flat circle or rectangle about 1/4 inch thick.

Cook the Flatbread

Preheat a grill or grill pan over medium heat. Cook each flatbread for about 3-4 minutes on each side until golden and cooked through.

Prepare the Goat Cheese

While the flatbreads are cooking, squeeze the roasted garlic out of its skin and mix it with soft goat cheese until well combined.

Assemble and Serve

Spread the roasted garlic goat cheese mixture on top of the warm flatbreads. Drizzle with balsamic reduction and serve immediately.
