Prepare the Pork

Season the pork shoulder with garlic powder, cumin, oregano, salt, and black pepper. Rub the mixture all over the pork.

Sear the Pork

In a large skillet, heat olive oil over medium-high heat. Sear the pork shoulder on all sides until browned, approximately 5-7 minutes per side.

Slow Cook the Pork

Transfer the pork to a slow cooker. Add apple cider vinegar, brown sugar, and water. Cover and cook on low for 8 hours or until the pork is tender and easily shredded.

Caramelize the Onions

While the pork is cooking, slice the onions and sauté them in a skillet with a bit of olive oil over medium heat until caramelized, about 20-25 minutes.

Prepare Jalapeños

Slice the jalapeños. You can remove the seeds for milder heat if desired.

Assemble the Sandwich

Once the pork is cooked, shred it using two forks. Layer the pulled pork, caramelized onions, jalapeños, and provolone cheese on a sandwich bun. Drizzle aioli on top before serving.
