Prepare the Pork

In a large pot, heat olive oil over medium-high heat. Season the pork shoulder with salt and black pepper. Sear the pork on all sides until browned, about 5-7 minutes.

Add Aromatics

Add the sliced onions and minced garlic to the pot. Sauté until the onions are caramelized, about 10 minutes.

Season and Cook

Stir in cumin, oregano, and cook for another minute. Add enough water to cover the pork and bring to a simmer. Cover and let it cook on low heat for 4-5 hours until the pork is tender and easily pulled apart.

Shred the Pork

Once cooked, remove the pork from the pot and shred it with two forks. Return the shredded pork to the pot to mix with the juices.

Assemble the Dish

In a serving dish, layer the pulled pork, followed by diced pineapple, sliced jalapeños, crumbled feta cheese, and chopped cilantro. Top with a generous dollop of crème fraîche.
