Marinate the Calamari
In a bowl, soak the calamari rings in buttermilk for at least 30 minutes. This helps to tenderize the calamari.

Prepare the Coating
In another bowl, mix together the flour, cornstarch, salt, black pepper, paprika, and garlic powder.
Cooking

Heat the Oil
In a deep fryer or large pot, heat the oil to 350°F (175°C).

Coat the Calamari
Remove the calamari rings from the buttermilk and let the excess drip off. Dredge them in the flour mixture until well coated.

Fry the Calamari
Fry the coated calamari in batches, being careful not to overcrowd the pan, for about 2-3 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.

Serve the fried calamari hot with your choice of dipping sauce, such as marinara or aioli.
