Press the firm tofu to remove excess moisture, then cut it into bite-sized cubes.

In a saucepan, combine the rice and vegetable broth. Bring to a boil, then reduce the heat to low, cover, and simmer for about 18-20 minutes or until the rice is cooked and fluffy.
