Prepare the Filling

In a large bowl, combine the ground pork, chopped shrimp, grated carrots, chopped mushrooms, soaked glass noodles, minced garlic, chopped onion, fish sauce, black pepper, and sugar. Mix well until all ingredients are evenly incorporated.

Take a spring roll wrapper and lay it flat on a clean surface. Place about 2 tablespoons of the filling mixture near the bottom of the wrapper. Fold the bottom over the filling, then fold the sides inward and roll tightly to seal. Repeat with remaining wrappers and filling.

Heat oil in a deep frying pan over medium heat. Once hot, carefully add the egg rolls in batches, frying until golden brown and crispy, about 4-5 minutes per side. Remove and drain on paper towels.
