    In a large bowl, combine minced garlic, minced shallots, chopped lemongrass, fish sauce, sugar, black pepper, and sesame oil. Mix well to form a marinade. Add the pork shoulder and ensure it is well coated. Cover and refrigerate for at least 2 hours, preferably overnight.

    Preheat your grill to medium-high heat. If using a charcoal grill, ensure the coals are evenly distributed.
