Activate Yeast

In a bowl, combine warm water, brown sugar, and active dry yeast. Let it sit for about 5 minutes until it becomes frothy.

Make Dough

In a large mixing bowl, combine flour and salt. Once the yeast is activated, add it to the flour mixture and stir until a dough forms.

Knead the Dough

Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic.

Rise the Dough

Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Shape Pretzel Bites

Once risen, punch down the dough and cut it into small pieces, about the size of a golf ball. Roll each piece into a small bite-sized ball.

Prepare Baking Soda Bath

In a large pot, bring 10 cups of water to a boil and add baking soda carefully. Reduce to a simmer.

Boil Pretzel Bites

Drop the pretzel bites into the simmering water bath, cooking them for about 30 seconds on each side. Remove with a slotted spoon and place on a parchment-lined baking sheet.

In a large skillet or deep fryer, heat vegetable oil over medium heat. Fry the pretzel bites in batches until golden brown, about 2-3 minutes per side. Drain on paper towels and sprinkle with coarse sea salt.
