Hard-boil eggs
Place 12 large eggs in a single layer in a medium saucepan and add cold water to cover by 1 inch. Bring to a gentle boil over medium-high heat. Once boiling, cover the pot, remove from heat, and let sit 10–12 minutes for fully set yolks.
Halve eggs lengthwise. Carefully remove yolks and place yolks in a medium mixing bowl; arrange egg white halves on a serving tray or platter.
Prepare Bloody Mary Mixtures
Mix Bloody Mary seasoning
In a small bowl combine 1 cup tomato juice or Clamato, 1 tsp prepared horseradish, 1 tsp celery salt, 1 tsp freshly cracked black pepper, and 1 tsp smoked paprika. Stir until incorporated. Taste and adjust hot sauce or horseradish if you want more heat. This mixture will be used to flavor the yolk filling and optionally add moisture when piping.
Make deviled yolk filling
Mash cooked yolks with a fork until crumbly. Add 1 cup mayonnaise, 2 tbs Dijon mustard, 1 tsp prepared horseradish, 1 tbs fresh lemon juice, 1 tsp Worcestershire sauce, 1 tsp hot sauce, 1 tsp kosher salt, and 1 tsp freshly ground black pepper. Add 3–4 tablespoons of the prepared Bloody Mary seasoning (from previous step) to the yolk mixture — start with 3 tbs and add up to 4 for desired tomato/Clamato intensity. Mix until very smooth; use a small food processor or hand mixer for an extra-silky texture. If mixture becomes too loose, add a little more yolk or a tablespoon of mayonnaise to adjust texture.
Assemble & Garnish
Fill egg whites
Transfer yolk mixture into a piping bag fitted with a medium star or round tip (or use a zip-top bag with a corner snipped). Pipe or spoon about 1–2 tablespoons of filling into each egg white half, mounding slightly.
Lightly dust the filled eggs with smoked paprika for color.
Garnish each deviled egg with one pickled jalapeño slice and a small sprinkle of chopped fresh chives. For a bolder presentation, top some eggs with a single cocktail shrimp or a drained caper instead of jalapeño.
Stick a small celery stick into a few eggs as an edible garnish 'stirrer' for a playful Bloody Mary feel.
Refrigerate assembled deviled eggs for at least 15 minutes to let flavors meld, but serve within 24 hours for best texture and freshness.
