Method
Queso Dip
Prepare the Dip
In a large skillet over medium heat, add the cream cheese. Stir until melted and smooth.
Add the Cheeses
Gradually mix in the sharp cheddar cheese and Monterey Jack cheese, stirring continuously until fully melted.
Incorporate the Other Ingredients
Add the diced tomatoes with green chilies, diced jalapeños, sliced green onions, garlic powder, cumin, salt, and black pepper. Stir until well combined.
Add Optional Proteins
If using, stir in the shredded chicken or steak and cook for an additional 3-5 minutes until heated through.
Serve Warm
Remove from heat and serve warm with tortilla chips.
Tortilla Chips
Cut the Tortillas
Cut the corn tortillas into triangles or strips, depending on your preference.
Fry the Chips
Carefully add a handful of tortilla pieces into the hot oil. Fry until golden brown and crisp, about 2-3 minutes, flipping halfway through.
Drain and Season
Using a slotted spoon, remove the chips from the oil and drain on paper towels. Immediately sprinkle with salt while they are still warm.
Repeat
Continue frying the remaining tortilla pieces in batches until all are cooked.
