Prepare the Pork

Cut the pork tenderloin into bite-sized pieces. Season with salt and black pepper.

Cook the Pork

In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the pork and cook until browned and cooked through, about 5-7 minutes. Remove the pork from the skillet and set aside.

Sauté Vegetables

In the same skillet, add the chopped onion and bell pepper. Sauté for about 3-4 minutes until the vegetables are tender.

In a small bowl, whisk together soy sauce, rice vinegar, brown sugar, ketchup, and cornstarch until smooth.

Return the cooked pork to the skillet, then add the pineapple chunks and the sauce mixture. Stir well to combine and cook for an additional 2-3 minutes until the sauce thickens.
