Prepare the Pork Filling
Add ground pork to the skillet and cook until browned and cooked through, about 8-10 minutes. Set aside to cool.

Assemble the Empanadas
Preheat your oven to 375°F (190°C). On a floured surface, roll out pie dough and cut into circles (about 4-5 inches in diameter). Place a spoonful of the pork mixture in the center of each circle, top with a sprinkle of Cotija cheese.

Seal Empanadas
Fold the dough over the filling to create a half-moon shape. Press the edges together to seal, using a fork to crimp the edges if desired. Place the empanadas on a baking sheet lined with parchment paper.

Prepare the Avocado Crema
While the empanadas are baking, prepare the avocado crema by blending ripe avocados with lime juice, salt, and a splash of water until smooth. Adjust seasoning to taste.
