    Prepare the Pork Filling

    Add ground pork to the skillet and cook until browned and cooked through, about 8-10 minutes. Set aside to cool.

    Assemble the Empanadas

    Preheat your oven to 375°F (190°C). On a floured surface, roll out pie dough and cut into circles (about 4-5 inches in diameter). Place a spoonful of the pork mixture in the center of each circle, top with a sprinkle of Cotija cheese.

    Seal Empanadas

    Fold the dough over the filling to create a half-moon shape. Press the edges together to seal, using a fork to crimp the edges if desired. Place the empanadas on a baking sheet lined with parchment paper.

    Bake the Empanadas

    Brush the tops of the empanadas with olive oil. Bake in the preheated oven for 20-25 minutes, or until golden brown.

    Prepare the Avocado Crema

    While the empanadas are baking, prepare the avocado crema by blending ripe avocados with lime juice, salt, and a splash of water until smooth. Adjust seasoning to taste.

    Once the empanadas are done baking, remove them from the oven and let cool slightly. Serve warm with avocado crema, braised red cabbage, and garnish with micro cilantro.
