Prepare the Vegetables
Preheat your oven to 400°F (200°C). Dice the sweet potatoes, red bell pepper, and zucchini into bite-sized pieces. Toss them in olive oil, salt, and black pepper.

Roast the Vegetables
Spread the seasoned vegetables on a baking sheet and roast for about 25-30 minutes, or until tender and slightly caramelized, stirring halfway through.

Sear the Halibut
While the vegetables are roasting, heat a skillet over medium-high heat. Season the halibut fillets with salt and black pepper. Add a little olive oil to the skillet and sear the halibut for 3-4 minutes on each side, or until golden brown and cooked through. Remove from the skillet and set aside.

Make the Coconut Curry Cream
In the same skillet, reduce the heat to medium, add the curry powder and cook for about 1 minute until fragrant. Then pour in the coconut milk and stir well. Allow it to simmer for about 5 minutes until slightly thickened.

Combine and Serve
To serve, place a portion of roasted vegetables on a plate, top with the seared halibut, and drizzle the coconut curry cream over the top. Garnish with fresh cilantro.
