    Caramelize the Onions

    In a large pot, melt the butter with olive oil over medium heat. Add the sliced onions and cook, stirring frequently, until they are caramelized and golden brown, about 25-30 minutes.

    Deglaze the Pot

    Add the dry white wine to the pot and scrape the bottom to deglaze. Allow it to simmer for about 5 minutes until the wine reduces slightly.

    Add Broth and Seasonings

    Pour in the beef broth and add thyme, bay leaf, salt, and black pepper. Bring it to a simmer and cook for an additional 20 minutes.

    Prepare the Crostini

    While the soup is simmering, preheat the oven to 400°F (200°C). Slice the baguette into 1-inch thick pieces, place them on a baking sheet, and toast in the oven for about 5-7 minutes until golden brown.

    Serve the Soup

    Remove the bay leaf from the soup. Ladle the soup into bowls, top each with a few pieces of toasted baguette, and sprinkle generously with smoked gouda cheese.

    Melt the Cheese

    Place the bowls under a broiler for 2-3 minutes until the cheese is melted and bubbly. Serve hot.
