    Prepare the Chicken

    In a large pot, heat olive oil over medium heat. Season the chicken thighs with salt and pepper, then brown them in the pot for about 5-7 minutes on each side until golden brown. Remove and set aside.

    Cook the Bacon and Vegetables

    In the same pot, add the diced bacon and cook until crispy. Add the chopped onion, sliced carrots, and minced garlic to the pot, cooking until the onions are translucent.

    Add Mushrooms and Herbs

    Stir in the quartered mushrooms along with the fresh thyme and bay leaf. Cook for an additional 3-4 minutes.

    Deglaze with Wine

    Pour in the red wine, scraping the bottom of the pot to deglaze. Bring to a simmer and let it reduce slightly for about 5 minutes.

    Combine Chicken and Broth

    Return the browned chicken thighs to the pot and add the chicken broth. Bring to a simmer, cover, and cook for about 30-40 minutes until the chicken is tender.

    Finish and Serve

    Remove the chicken and vegetables from the pot, and let the sauce simmer uncovered for an additional 10 minutes to thicken. Serve the chicken with the sauce poured over it.
