Prepare the Sweet Potatoes
Peel and chop the Jamaican sweet potatoes into small pieces. Boil them in a pot of water until they are tender, about 15-20 minutes. Drain and let cool slightly.

Mash the Potatoes
In a mixing bowl, mash the boiled sweet potatoes until smooth. Make sure there are no lumps for a creamy pudding texture.

Mix the Ingredients
In a large bowl, combine the mashed sweet potatoes, brown sugar, coconut milk, melted butter, and vanilla extract. Mix until well combined.

Add Dry Ingredients
In a separate bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and salt. Gradually add the dry mixture to the wet mixture, stirring until just combined.
