Prepare Fried Chicken
1. In a large bowl, soak the chicken pieces in buttermilk for at least 2 hours, or overnight in the refrigerator for best results.
Coat Chicken
2. In a separate bowl, mix the flour, paprika, garlic powder, onion powder, salt, and black pepper. Remove the chicken from the buttermilk, allowing excess to drip off, and coat in the flour mixture.
Fry Chicken
3. Heat oil in a deep frying pan over medium-high heat. Fry the coated chicken pieces until golden brown and cooked through, about 15-20 minutes. Drain on paper towels.
Prepare Oxtail
4. In a large pot, brown the oxtail pieces on all sides over medium-high heat. Remove and set aside.
Simmer Oxtail
6. Return the oxtail to the pot, add beef broth, bay leaves, salt, black pepper, and thyme. Bring to a boil, then reduce heat to low and cover. Simmer for about 3 hours, until the oxtail is tender.
Serve
7. Serve the fried chicken alongside the tender oxtail with some of the broth. Enjoy!
