Prepare the Chicken
In a large bowl, soak the chicken pieces in buttermilk for at least 2 hours or overnight in the refrigerator.

Prepare the Coating
In another bowl, combine flour, paprika, garlic powder, onion powder, salt, and black pepper.

Coat the Chicken
Remove chicken from buttermilk, allowing excess to drip off. Dredge each piece in the flour mixture, ensuring even coating.

Fry the Chicken
Heat oil in a deep skillet over medium-high heat. Fry chicken pieces in batches until golden brown and cooked through, about 12-15 minutes per batch. Drain on paper towels.

Add Chicken and Spices
Add the chicken pieces to the pot, followed by curry powder, salt, and black pepper. Cook until the chicken is browned on all sides.

Simmer
Pour in the coconut milk and chicken broth. Bring to a simmer, cover, and cook for about 25-30 minutes until the chicken is tender.

Adjust seasoning if needed. Stir in chopped cilantro before serving.
