    Marinate the Goat

    In a large bowl, combine goat meat, curry powder, garlic, ginger, onion, thyme, salt, and black pepper. Mix well to coat the meat evenly. Cover and marinate for at least 2 hours, preferably overnight in the refrigerator.

    Sauté the Vegetables

    In a large pot, heat vegetable oil over medium heat. Add the chopped bell pepper and sauté for about 3-4 minutes until soft. Stir in the marinated goat meat and cook until browned on all sides.

    Add Liquids and Spices

    Pour in the coconut milk and water. Add the whole scotch bonnet pepper and allspice berries. Bring to a boil, then reduce heat to low.

    Simmer the Curry

    Cover the pot and let the curry simmer for about 1.5 to 2 hours, or until the goat meat is tender. Stir occasionally and add more water if necessary to prevent burning.

    Serve

    Once the goat is tender, taste and adjust seasoning if necessary. Remove the scotch bonnet pepper before serving. Serve hot with your choice of sides.
