Prepare Ingredients
Cut the chicken into bite-sized pieces and season with salt, black pepper, and curry powder. Let it marinate for at least 30 minutes.

Sauté Vegetables
In a large pot or slow cooker, heat vegetable oil over medium heat. Add chopped onions, garlic, and ginger. Sauté until the onions are translucent.

Brown the Chicken
Add the marinated chicken pieces to the pot and cook until browned on all sides.

Add Remaining Ingredients
Stir in the bell pepper, coconut milk, chicken broth, thyme, and scotch bonnet pepper. Bring to a simmer.

Slow Cook
Reduce heat to low, cover, and let it slow cook for about 1.5 to 2 hours, or until the chicken is tender and the flavors are well combined.

Serve
Remove the scotch bonnet pepper before serving. Serve hot with rice or bread.
