    Prepare the Fish

    Clean the Pampano fish and pat dry. Season with salt, black pepper, and lime juice. Let it marinate for about 15 minutes.

    Fry the Fish

    In a large skillet, heat the vegetable oil over medium-high heat. Fry the marinated fish for about 4-5 minutes on each side until golden brown. Remove from skillet and set aside.

    Make the Sauce

    In the same skillet, add sliced onion, minced garlic, chopped bell pepper, and chopped tomato. Sauté until softened, about 3-4 minutes.

    Add Flavor

    Stir in fresh thyme, whole scotch bonnet pepper, chicken broth, soy sauce, and brown sugar. Bring to a simmer.

    Combine and Simmer

    Return the fried fish to the skillet, spooning the sauce over it. Cover and simmer for about 10 minutes, allowing the flavors to meld.

    Serve

    Serve the Brown Stew Pampano hot, garnished with fresh herbs if desired.
