    Marinate the Chicken

    In a large bowl, combine the chicken pieces, soy sauce, thyme, garlic, salt, and black pepper. Let marinate for at least 30 minutes.

    Brown the Chicken

    In a large pot or Dutch oven, heat the vegetable oil over medium-high heat. Add the marinated chicken pieces and brown on all sides. Remove the chicken and set aside.

    Sauté Vegetables

    In the same pot, add the sliced onion, bell pepper, and carrot. Sauté until the vegetables are soft.

    Add Chicken and Broth

    Return the browned chicken to the pot. Add the chicken broth and brown sugar. Bring to a boil.

    Reduce the heat to low, cover the pot, and let it simmer for about 45 minutes, or until the chicken is fully cooked and tender.
