Prepare the Spareribs
Preheat the oven to 300°F (150°C). Rub the pork spareribs with the ginger BBQ sauce and place them on a baking tray lined with foil. Cover with another piece of foil and bake for 2.5 to 3 hours until tender.

Make the Papaya Salad
While the ribs are baking, peel and shred the green papaya and carrot. In a bowl, combine the papaya, carrot, juice of 1 lime, fish sauce, sugar, and chili flakes. Toss well and set aside.

Prepare the Lime Vinaigrette
In a small bowl, whisk together the juice of the remaining lime, tamari sauce, minced garlic, and a pinch of chili flakes. Set aside.

Serve
Slice the ribs and serve with the papaya salad on the side. Drizzle the lime vinaigrette over the salad and garnish with fresh cilantro.
