Preparation

Doughnuts

1. Prepare the Dough

In a mixing bowl, combine flour, sugar, baking powder, and salt. In another bowl, whisk eggs, milk, melted butter, espresso, and vanilla. Mix wet and dry ingredients until just combined.

2. Fry the Doughnuts

Heat oil in a deep fryer to 350°F (175°C). Pipe or drop batter into hot oil, frying until golden brown on both sides. Drain on paper towels.

Bailey's Pastry Cream

3. Make the Pastry Cream

In a saucepan, heat milk and sugar until steaming. In a bowl, whisk egg yolks and cornstarch. Slowly add hot milk to egg mixture, then return to saucepan and cook until thickened. Stir in butter, Bailey's, and vanilla. Cool completely.

Bourbon Caramel

4. Prepare the Caramel

In a saucepan, combine sugar and water, cook until caramelized. Remove from heat and carefully stir in cream and butter. Once cooled, add bourbon.

Chocolate Coffee Bean Crumble

5. Make the Crumble

Mix crushed cookies, coffee beans, melted butter, and sugar in a bowl. Spread on a baking sheet and bake at 350°F (175°C) for 10 minutes until crisp.
