Prepare the Soba Noodles

Bring a pot of salted water to a boil. Add the soba noodles and cook according to package instructions until tender. Drain and rinse under cold water to stop cooking. Set aside.

Cook the Szechuan Beef Ribs

In a large skillet or wok, heat some oil over medium-high heat. Add the Szechuan beef ribs and sear until browned on all sides. Reduce heat to medium, cover, and let simmer for about 45 minutes or until the meat is tender.

Sauté the Mushrooms and Bok Choy

In another pan, heat a little oil over medium heat. Add the sliced chestnut mushrooms and cook until browned. Add the baby bok choy and sauté until wilted, about 3-4 minutes.

Combine and Serve

In serving bowls, layer the soba noodles, Szechuan beef ribs, sautéed mushrooms, and bok choy. Top with crispy shallots for crunch. Drizzle with additional Szechuan sauce if desired.
