Panna Cotta Preparation

1

2

Heat Cream & Honey

In a saucepan, heat the heavy cream and honey over medium heat until just boiling. Remove from heat.

3

Combine Gelatin

Add the bloomed gelatin to the hot cream mixture and stir until fully dissolved. Stir in vanilla extract.

4

Chill

Pour the mixture into serving glasses and refrigerate for at least 4 hours until set.

Blackberry Cake Preparation

5

Preheat Oven

Preheat the oven to 350°F (175°C). Grease and flour an 8-inch round cake pan.

6

Mix Dry Ingredients

In a bowl, whisk together flour, sugar, baking powder, and salt.

7

Cream Butter & Eggs

In another bowl, cream the butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition.

8

Combine Ingredients

Gradually mix in the dry ingredients, then fold in the blackberries.

9

Bake

Pour the batter into the prepared pan and bake for 25-30 minutes or until a toothpick comes out clean. Let cool.

Blackberry Sauce Preparation

10

Cook Sauce

In a saucepan, combine blackberries, sugar, and lemon juice. Cook over medium heat until the berries break down and the sauce thickens, about 10 minutes. Strain if desired.

Honey-Brown-Sugar Syrup Preparation

11

Combine Ingredients

In a small saucepan, combine honey, brown sugar, and water. Bring to a simmer over medium heat, stirring until the sugar dissolves. Let cool.

Orange Tuile Preparation

12

Mix Batter

In a bowl, combine flour, powdered sugar, egg whites, orange zest, and melted butter until smooth.

13

Bake Tuiles

Drop small spoonfuls of batter on a baking sheet lined with parchment paper and spread thin. Bake at 350°F (175°C) for 5-7 minutes until golden. Let cool and shape if desired.

Toasted Pistachios Preparation

14

Toast Pistachios

In a dry skillet, toast the pistachios over medium heat until fragrant, about 5 minutes. Let cool and chop.

Black Tea & Herb Sorbet Preparation

15

Brew Tea

Boil water and steep tea bags for 5 minutes. Remove tea bags and add sugar, stirring until dissolved.

16

Add Herbs & Freeze

Stir in chopped herbs and lemon juice, then cool the mixture. Freeze in an ice cream maker according to manufacturer's instructions.
