Method
Panna Cotta Preparation
Bloom Gelatin
In a small bowl, sprinkle gelatin over cold water and let it bloom for about 5 minutes.
Heat Cream & Honey
In a saucepan, heat the heavy cream and honey over medium heat until just boiling. Remove from heat.
Combine Gelatin
Add the bloomed gelatin to the hot cream mixture and stir until fully dissolved. Stir in vanilla extract.
Chill
Pour the mixture into serving glasses and refrigerate for at least 4 hours until set.
Blackberry Cake Preparation
Preheat Oven
Preheat the oven to 350°F (175°C). Grease and flour an 8-inch round cake pan.
Mix Dry Ingredients
In a bowl, whisk together flour, sugar, baking powder, and salt.
Combine Ingredients
Gradually mix in the dry ingredients, then fold in the blackberries.
Bake
Pour the batter into the prepared pan and bake for 25-30 minutes or until a toothpick comes out clean. Let cool.
Blackberry Sauce Preparation
Honey-Brown-Sugar Syrup Preparation
Combine Ingredients
In a small saucepan, combine honey, brown sugar, and water. Bring to a simmer over medium heat, stirring until the sugar dissolves. Let cool.
Orange Tuile Preparation
Bake Tuiles
Drop small spoonfuls of batter on a baking sheet lined with parchment paper and spread thin. Bake at 350°F (175°C) for 5-7 minutes until golden. Let cool and shape if desired.
Toasted Pistachios Preparation
Toast Pistachios
In a dry skillet, toast the pistachios over medium heat until fragrant, about 5 minutes. Let cool and chop.
Black Tea & Herb Sorbet Preparation
Brew Tea
Boil water and steep tea bags for 5 minutes. Remove tea bags and add sugar, stirring until dissolved.
Add Herbs & Freeze
Stir in chopped herbs and lemon juice, then cool the mixture. Freeze in an ice cream maker according to manufacturer's instructions.
