Scone Preparation

Preheat the Oven
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.

Mix Dry Ingredients
In a large bowl, whisk together the flour, baking powder, baking soda, and salt.

Cut in the Butter
Add the cold unsalted butter into the flour mixture. Use a pastry cutter or your fingers to work the butter until the mixture resembles coarse crumbs.

Combine Wet Ingredients
In a separate bowl, combine the buttermilk and pimento cheese. Stir until well blended.

Combine Mixtures
Add the wet mixture to the dry ingredients, stirring gently until just combined. Fold in the chopped fresh chives.

Shape the Scones
Turn the dough out onto a lightly floured surface and pat it into a rectangle about 1 inch thick. Cut into triangles or use a biscuit cutter to form rounds.

Bake the Scones
Place the scones on the prepared baking sheet and bake for 15-20 minutes or until golden brown.

Allow the scones to cool slightly before serving. Serve warm with sorghum butter and pepper jelly.
