Agnolotti Preparation

Making the Dough

In a mixing bowl, combine the flour and eggs. Mix until a dough forms. Knead on a floured surface until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

Preparing the Filling

In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute. Add maitake mushrooms, salt, and pepper. Cook until mushrooms are tender, about 5-7 minutes. Let cool and blend until smooth.

Forming the Agnolotti

Roll out the dough into thin sheets. Place small dollops of the mushroom filling on one sheet, fold over, and seal edges with a fork. Cut into squares or desired shape.

Cooking the Agnolotti

Bring a pot of salted water to a boil. Cook the agnolotti for 3-4 minutes until they float. Remove and drain.

Brown Butter Cream Sauce

In a saucepan, melt 4 tablespoons of butter over medium heat until it turns golden brown. Add 1 cup of heavy cream and stir until combined. Season with salt and pepper.

Caramelized Onions

In a skillet, melt 1 tablespoon of butter, add sliced onions and cook over low heat for about 20 minutes until caramelized. Stir in capers.

Plate the agnolotti, drizzle with brown butter cream sauce, and top with caramelized onions and capers.
