Fried Oysters Preparation

Prepare the Oysters
Rinse the fresh oysters under cold water, then place them in a bowl and cover with buttermilk. Let them soak for at least 30 minutes.

Prepare the Breading
In a shallow dish, mix the cornmeal, flour, salt, and black pepper. In another bowl, beat the egg.

Coat the Oysters
Remove the oysters from the buttermilk, allowing excess to drip off. Dip each oyster into the beaten egg, then dredge in the cornmeal mixture, ensuring they are well coated.

Heat the Oil
In a deep skillet or frying pan, heat the vegetable oil over medium-high heat until hot (about 350°F or 175°C).

Fry the Oysters
Carefully add the coated oysters to the hot oil in batches, frying for about 2-3 minutes on each side or until golden brown. Remove and drain on paper towels.

Arrange the fried oysters on a plate, top with diced cucumber, pickled onions, and drizzle with pimento oil. Serve immediately.
