Prepare the Vegetables

Start by washing and trimming the broccolini, cutting it into 2-inch pieces. Slice the spring onions, both the green and white parts. If using whole baby corn, cut them in half lengthwise.

Sauté the Vegetables

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sweet corn kernels, spring onions, broccolini, and baby corn. Sauté for about 5-7 minutes until the vegetables are tender but still crisp. Season with salt and pepper. Remove from the skillet and set aside.

Sear the Scallops

In the same skillet, add the remaining tablespoon of olive oil and increase the heat to high. Pat the diver scallops dry with paper towels and season with salt and pepper. Carefully place the scallops in the skillet and sear for 2-3 minutes on each side until they are golden brown and opaque in the center.

Combine and Serve

Once the scallops are cooked, add the sautéed vegetables back into the skillet. Drizzle with lemon juice and toss gently to combine. Serve immediately on a plate, garnished with extra spring onions if desired.
