    Preheat the oven to 400°F (200°C). Cut the cauliflower into florets, toss with olive oil and a pinch of salt, and spread on a baking sheet. Roast for 25-30 minutes until tender and golden brown.

    Once the cauliflower is roasted, let it cool slightly. In a food processor, blend the cauliflower until smooth. In a bowl, combine the cauliflower puree, egg, flour, and salt. Mix until a dough forms.

    On a floured surface, roll the dough into long ropes and cut into small pieces (about 1 inch each). Use a fork to create ridges on each piece.

    In a blender, combine basil, heavy cream, and a pinch of salt. Blend until smooth and set aside.
