Preparation Steps
- 1
Roast Cauliflower
Preheat the oven to 400°F (200°C). Cut the cauliflower into florets, toss with olive oil and a pinch of salt, and spread on a baking sheet. Roast for 25-30 minutes until tender and golden brown.

- 3
Shape Gnocchi
On a floured surface, roll the dough into long ropes and cut into small pieces (about 1 inch each). Use a fork to create ridges on each piece.
- 4
Prepare Basil Cream Sauce
In a blender, combine basil, heavy cream, and a pinch of salt. Blend until smooth and set aside.
- 5
Toast Almonds
In a dry skillet over medium heat, toast the almonds until golden brown, about 5 minutes. Stir frequently to prevent burning.
- 6
Cook Gnocchi
Bring a large pot of salted water to a boil. Cook the gnocchi in batches until they float to the top, about 2-3 minutes. Remove and drain.
- 7
Serve
In a serving dish, combine the gnocchi with basil cream sauce. Top with crispy prosciutto and toasted almonds before serving.
