Preparation Steps
Prepare the Cheesecake
Preheat the oven to 325°F (160°C). In a large mixing bowl, beat together cream cheese and granulated sugar until smooth. Add sour cream and vanilla extract, mixing well. Add eggs one at a time, mixing until just combined. In a separate bowl, combine graham cracker crumbs and melted butter, then press into the bottom of a springform pan. Pour the cheesecake mixture over the crust and bake for 50-60 minutes or until set. Let cool before refrigerating for at least 4 hours.
Make the Spiced Apples
In a skillet, combine diced apples, brown sugar, cinnamon, and bourbon. Cook over medium heat until apples are soft and caramelized, about 10 minutes. Remove from heat and let cool.
Prepare the Apple Gelee
In a small saucepan, heat apple juice until warm. Sprinkle gelatin on top and stir until dissolved. Pour over the cooled cheesecake layer and refrigerate until set, about 2 hours.
Serve with Ice Cream
Scoop cinnamon brown sugar ice cream onto slices of the caramel apple cheesecake and serve immediately.
