Prepare the Vichyssoise
In a pot, heat 2 tablespoons of olive oil over medium heat. Add minced garlic and sliced leeks. Sauté until leeks are soft, about 5 minutes. Add vegetable broth and bring to a boil. Reduce heat and let it simmer for 15 minutes. Blend until smooth, stir in heavy cream, and season with salt and black pepper.

Roast the Branzino
Preheat the oven to 400°F (200°C). Clean and gut the Branzino, then drizzle with olive oil, season with salt and pepper, and place on a baking sheet. Roast for 20-25 minutes until the fish is cooked through and flakes easily.

Cook the Spaghetti Squash
Cut the spaghetti squash in half lengthwise, scoop out the seeds, and brush with olive oil. Season with salt. Place cut side down on a baking sheet and roast in the oven for about 30-40 minutes until tender. Scrape the flesh with a fork to create spaghetti-like strands.

Fry the Leeks
Slice leeks thinly and rinse to remove grit. Pat dry. In a frying pan, heat olive oil over medium-high heat. Fry the leeks until golden brown and crispy, about 3-5 minutes. Drain on paper towels.
