Method

Pork Tenderloin Preparation

    Preheat the Oven

    Preheat your oven to 400°F (200°C).

    Season the Pork

    Rub the pork tenderloin with olive oil, salt, black pepper, and garlic powder.

    Roast the Pork

    Place the seasoned pork on a baking sheet and roast for 25-30 minutes, or until the internal temperature reaches 145°F (63°C). Let it rest for 10 minutes before slicing.

Garlic Spinach Preparation

    Sauté the Spinach

    In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.

    Add Spinach

    Add the fresh spinach and salt, cooking until wilted, about 3-5 minutes. Remove from heat.

Chipotle Aioli Preparation

    Mix Ingredients

    In a bowl, combine mayonnaise, chipotle peppers in adobo sauce, lime juice, and garlic powder. Mix well until smooth.

    Taste and Adjust

    Taste the aioli and adjust seasoning if necessary, adding more chipotle or lime juice to taste.

Chipotle Au Jus Preparation

    Heat the Broth

    In a small saucepan, combine beef broth, chipotle peppers, and garlic powder. Bring to a simmer over medium heat.

    Let the mixture simmer for about 10 minutes, allowing the flavors to meld. Strain if desired.

Assembly

    Slice the Pork

    Thinly slice the rested pork tenderloin.

    Prepare the Bread

    Slice the crusty bread or baguette into portions for serving.

    Build the Dip

    On each slice of bread, layer slices of pork, sautéed garlic spinach, and provolone cheese. Drizzle with chipotle aioli.

    Serve the assembled sandwiches with the chipotle au jus on the side for dipping.
